Watermelon Cups


Ingredients:
16 seedless watermelon cubes (1 inch)
1/3 cup finely chopped cucumber
5 teaspoons finely chopped red onion
2 teaspoons minced fresh mint
2 teaspoons minced fresh cilantro
1/2 to 1 teaspoon lime juice

Directions
  1. Using a small melon baller or measuring spoon, scoop out the center of each watermelon cube, leaving a 1/4-in. shell (save pulp for another use).
  2. In a small bowl, combine the remaining ingredients; spoon into watermelon cubes. Yield: 16 appetizers.

Fruit Smoothie

Directions

Puree 1 cup vanilla yogurt, 1 cup frozen strawberries, 1 frozen banana and 1/4 cup orange juice in a blender until smooth.

Green Smoothie


Makes 1 smoothie (or 2 kid Sized)

½ cup vanilla almond, soy or coconut milk
1 cup frozen pineapple pieces
1 cup frozen mango chunks
1 big handful fresh baby spinach

Variations:
- add a small container of yogurt for added protein and calcium
- add one tablespoon of any of the following:
            chai seeds
            natural flaked coconut
            peanut or almond butter

Directions
Pour milk into a blender. Add pineapple, mango and spinach. Cover with blender lid and blend to combine. If blender stops turning add a little more milk. You can add a couple of ice cubes to make it extra cold and icy.
